Zucchini Fruit Loaf (Bread)(permalink) 3 eggs, well beaten l cup oil 2 cups sugar 2 tsp vanilla 2 cups grated zucchini 1 cup applesauce 3 cups flour 2 tsp baking soda 1/2 tsp baking powder 1 tsp salt 1 tsp nutmeg 1 1/2 tsp cinnamon l cup nuts, chopped (I like walnuts or pecans) l cup raisins Combine eggs, oil, sugar and vanilla and beat until frothy. Add zucchini and applesauce and mix well. Mix dry ingredients, add to mixture and combine well. Add nuts and raisins. Before putting in oven, top with additional chopped nuts and sugar. Bake in 2 loaf pans at 350 degrees for about 1 hour. Enjoy! Recipe from the kitchen of Carolyn Sonnekalb Challah (Bread)(permalink) Ingredients: 7/8 cup water 1/2 tablespoon salt 1/4 cup honey 2 eggs 1/2 cup butter, melted 4+ cups all purpose flour 1 package (2 teaspoons) dry yeast Combine above and mix well. Knead or process in food processor. Let rise once, punch down and shape into a loaf or braid. Let rise again. Brush top with beaten egg for shiny crust. Bake 350 degrees for 30-45 minutes, or until golden brown. This recipe was taken from breadrecipe.com Makes 1 two pound loaf Pumpkin Bread (Bread)(permalink) Ingredients: (A) 2 2/3 cup sugar 1 cup oil 4 eggs 2 cups pumpkin (B) 3 1/3 cups flour 2 teaspoons baking soda 1 1/2 teaspoons baking powder 1 1/2 teaspoons salt 1 teaspoon cinnamon 1/4 teaspoon cloves (C) 2/3 cup water optional: Raisins and/or nuts (1/2 cup of each) Cream sugar and oil. Add eggs and pumpkin, mixing well. Sift (B) together and add to batter, alternating with water. Stir in raisins and/or nuts, if desired. Pour into 2 greasedand floured loaf pans. Bakein a preheated 350 degree oven for about 1 hour. Let loaves cool on wire rack for10 minutes before removing from pan and cooling completely. Note: My mom adds 1 teaspoon of vanillan extract and deletes 1 teaspoon of water to add a nice flavor to the bread. I recommend you do the same. This recipe is from the kitchen of Libby's Mom. Banana Bread (Bread)(permalink) Ingredients: 1/2 cup butter 1 cup sugar 2 eggs, well beaten 2-3 medium, ripe bananas, mashed 2 cups flour 1 teaspoon baking soda 1/4 teaspoon salt 1 cup sour milk, or buttermilk Cream butter and sugar together. Add eggs and beat well. Mix in bananas. Sift dry ingredients together, and add to banana mixture, alternating with milk. Pour into a well greased 9x5" bread pan and bake at 350 degrees for about 1 hour, or until bread tests done. This is nice with sugar sprinkled on the top of the batter before baking. Also nice with nuts in it, or sprinkled on top of the sugar as a topping. |
