Pumpkin Bread (Bread)(permalink) Ingredients: (A) 2 2/3 cup sugar 1 cup oil 4 eggs 2 cups pumpkin (B) 3 1/3 cups flour 2 teaspoons baking soda 1 1/2 teaspoons baking powder 1 1/2 teaspoons salt 1 teaspoon cinnamon 1/4 teaspoon cloves (C) 2/3 cup water optional: Raisins and/or nuts (1/2 cup of each) Cream sugar and oil. Add eggs and pumpkin, mixing well. Sift (B) together and add to batter, alternating with water. Stir in raisins and/or nuts, if desired. Pour into 2 greasedand floured loaf pans. Bakein a preheated 350 degree oven for about 1 hour. Let loaves cool on wire rack for10 minutes before removing from pan and cooling completely. Note: My mom adds 1 teaspoon of vanillan extract and deletes 1 teaspoon of water to add a nice flavor to the bread. I recommend you do the same. This recipe is from the kitchen of Libby's Mom. |
