Zucchini Fruit Loaf (Bread)(permalink) 3 eggs, well beaten l cup oil 2 cups sugar 2 tsp vanilla 2 cups grated zucchini 1 cup applesauce 3 cups flour 2 tsp baking soda 1/2 tsp baking powder 1 tsp salt 1 tsp nutmeg 1 1/2 tsp cinnamon l cup nuts, chopped (I like walnuts or pecans) l cup raisins Combine eggs, oil, sugar and vanilla and beat until frothy. Add zucchini and applesauce and mix well. Mix dry ingredients, add to mixture and combine well. Add nuts and raisins. Before putting in oven, top with additional chopped nuts and sugar.
